Look for These Two Cuisines in 2018

What are people eating in 2018? Deep flavors from deep food traditions.

Last year, it was reported that Google searches for Filipino food has more than doubled since 2012, and though many industry experts have talked about the birth of this new cuisine style for several years, it finally seems like the time is now.

"Consumers’ demand for deeper flavor exploration is still strong, as evidenced by the interest in Filipino and regional Middle Eastern foods," said Denise Purcell, head of content for the Specialty Foods Association.

Of those Middle Eastern foods, expect Israeli cuisine to lead the way. Pretty much everyone knows about hummus and pita by now, but diners are looking to go deeper and explore other regional dishes and ingredients like tahini, eggplant, and fresh Israeli salads. But good luck finding tomatoes and cucumbers as fresh as they are in Israel.
